- Core: 2 cups Aged Kimchi + 1/2 cup Kimchi Brine
- Protein: 250g Pork Belly, 1/2 block Tofu
- Aromatics: 1/2 Onion, 2 Green Onions, 1 Green Chili
- Seasoning: 1 tbsp Gochugaru, 1 tbsp Garlic, 1 tbsp Soup Soy Sauce
- Broth: 2.5 cups Anchovy-Kelp Stock
👨🍳 How to Cook
- Sauté pork belly until fat renders and edges brown.
- Add aged kimchi + sugar, stir-fry 5 min until translucent.
- Stir in gochugaru & garlic, cook 1 min.
- Add stock + kimchi brine. Boil, then simmer covered 20 min.
- Season with soup soy sauce. Lay tofu slices on top, simmer 5 min uncovered.
- Garnish with green onions. Serve bubbling hot with rice!
